I am always looking for healthy ways to feed my little family... and do it affordably. I have never been a huge fan of shredded chicken until I started making it! My husband and I can eat off this for $6 a week! The possibilities are endless - BBQ chicken, chicken soft tacos, pesto chicken, pasta... you get the drift! If you get the breasts on sale, you can get them for like $3. But, most weeks, I'll spend $6 for 3 big chicken breasts... and it feeds us for several days. The best thing is that I cranked out the ole crockpot. So, I basically did nothing in terms of work. 1. First you get your chicken. You'll save money with the skin on... and it will separate anyway. I have done chicken breasts and chicken quarters. I prefer white meat because it cooks so well in the crockpot. But as you see in pic 2, you can also use frozen skinless chicken breasts. I also poured a can of chicken broth inside. 2. Turn it on high for 4 hours or low for 8 hours. I also threw in a pinch of salt, sugar, pepper and thyme. Whatever works! I don't really think the time is a big deal because I've definitely left it on high for much longer on accident and it always turns out fine. 3. Whip out your gloves! You don't have to, but I like touching my food without touching my food. These handy gloves come from the Asian market. 4. Shred it, baby! 5. It's up to you if you want to resist giving some scraps to your dogs... 6. 6. But truthfully, there aren't very many scraps. You waste hardly anything!
